Ingredients:
- 2 cups mixed chopped vegetables (potatoes, cauliflower, peas, carrots)
- 1 large finely chopped onion
- 1 finely chopped capsicum
- 3 finely chopped tomatoes
- 1/2 cup boiled and mashed green peas
- 4 grated garlic
- 1-inch grated ginger
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- Salt as per taste
- 2 tablespoons oil
- 2 tablespoons butter
- 1 slices of cheese(optional)
- Pav (buns), lightly toasted with butter
Method:
- In a pressure cooker, add the chopped potatoes, cauliflower, peas, and carrots.
- Add enough water to cover the vegetables and cook for 2 whistles. After that drain the water from vegetables and set aside.
- Heat oil in the pressure cooker. Add cumin seeds.
- Add grated garlic and ginger. Fry until the raw smell disappears.
- Add chopped onions and cook for 2-3 minutes until they turn golden brown.
- Now add tomatoes and cook until tomatoes become soft and oil separates from it.
- Add pav bhaji masala, red chili powder, turmeric powder after that add salt. Mix well.
- Mash the boiled vegetables and add them to the cooker along with boiled and mashed green peas.
- Mix everything and let it simmer for 5-7 minutes on medium flame.
- Add butter to the bhaji and mix until it melts, giving the dish a rich and buttery flavor.
- Toast the pav (buns) with butter.
- Serve hot and tasty bhaji with buttery pav, chopped onions and lemon slices.
