Ingredients:
- 1 cup basmati rice
- 1/2 cup yellow moong dal (split yellow lentils)
- 1 finely chopped large onion
- 1 large chopped tomato
- 1/2 cup chopped mixed vegetables (carrots, peas, and green beans)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons ghee or oil
- Salt as per taste
- 4 cups water
- Fresh coriander leaves for garnish
Method:
- Wash the rice and moong dal and Set them aside.
- Heat ghee or oil in the pressure cooker and Add cumin seeds and mustard seeds. fry for 1 minutes,
- Add the finely chopped onions and fry until the onions become golden brown.
- After that add the ginger-garlic paste and fry for a minute.
- Add the mixed vegetables and chopped tomatoes. Cook for 2-3 minutes.
- Add turmeric, red chili, and garam masala powder. Mix well all vegetables in the spices.
- Now, add the washed rice and moong dal in the pressure cooker.
- Add 4 cups of water and salt according to your taste. Mix everything well.
- Close the lid of the cooker and cook 5-7 minutes on medium flame.
- Turn off the heat and once the pressure is released, open the lid.
- Gently fluff the khichdi with a fork. Garnish with fresh coriander leaves.
