Gobi paratha recipe

Ingredients:

For the dough & filling:

  • 2 cups whole wheat flour
  • Water (as needed)
  • 2 cups grated cauliflower (Gobi)
  • 1 finely chopped small onion
  • 2 finely chopped green chilies
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt as per taste
  • Fresh chopped coriander leaves
  • Ghee or oil for cooking

Method:

For the dough & Filling:

  • Take the whole wheat flour and a pinch of salt in a mixing bowl.
  • Add water while kneading to form a soft and smooth dough. Cover it and set it aside while you prepare the filling.
  • Heat a pan on medium flame and add one tablespoon of oil.
  • Add cumin seeds and let them fry for a few seconds.
  • Add finely chopped onions and fry until they turn translucent.
  • Add the finely chopped green chilies and grated cauliflower.
  • Cook the cauliflower mixture on medium flame for about 5-7 minutes.
  • Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook until the cauliflower is tender, and the moisture is evaporated.
  • Remove cauliflower from heat and allow it to cool.
  • Add freshly chopped coriander leaves to the filling mixture.

Cooking Gobi Paratha:

  • Divide the dough into equal-sized balls.
  • Take one dough ball and flatten it.
  • Place a generous spoonful of the cauliflower filling in the center of the flatten dough.
  • Carefully bring the edges of the dough together to seal the filling inside.
  • Gently flatten the stuffed dough ball with your hands.
  • Heat a flat pan (tava) over medium-high flame.
  • Place the the paratha on the tava and cook for about 1-2 minutes until you see bubbles forming.
  • Flip the paratha and apply ghee or oil on the surface.
  • Cook the other side until it turns golden brown, applying more ghee or oil if needed.
  • Repeat the process for the remaining dough.
  • Serve hot Gobi Parathas with yogurt, pickle, or your favorite chutney.

Cauliflower filling should be dry to prevent the parathas from becoming soggy. You can also add grated cheese to the filling for a cheesy twist on this gobi paratha recipe.
