Ingredients:
- 250 grams of fresh spinach leaves (palak)
- 200 grams of cubed paneer (cottage cheese)
- 2 tablespoons of oil or ghee
- 1 finely chopped large onion
- 2-3 cloves of garlic
- 1-inch grated piece of ginger
- 2 finely chopped green chilies
- 2 finely chopped ripe tomatoes
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt as per taste
- 2 tablespoons of cream
- 1 tablespoon of butter
Method:
- Boil a pot of water and add the spinach leaves to it. Let them blanch for 2-3 minutes until they turn bright green.
- Once the spinach is cooled, blend it into a smooth puree.
- In the pan, add oil.
- Add cumin seeds. After that Add the finely chopped onions, garlic, and green chilies. fry until the onions turn translucent.
- Add turmeric, red chili, coriander powder and salt. fry for a couple of minutes until the spices.
- Add the finely chopped tomatoes and cook until the oil starts to separate from the mixture.
- Add in the spinach puree and cook for a few minutes.
- Gently add the paneer cubes to the gravy and let them simmer for a few minutes. If you doesn’t want too thick gravy you can add a little water.
- Add the cream and garam masala. After you add a tablespoon of butter for extra richness. Simmer for another 2-3 minutes.
- Your creamy Palak Paneer is ready! Serve it hot with naan, roti, or rice.
